Description
Irish Distillers’ first ever virgin Irish oak (Dair Ghaelach in Gaelic) finished whiskey. Single pot still whiskeys that had matured for between 15 and 22 years in ex-bourbon casks were selected for this release and married together before being filled into the Irish oak hogsheads. Sustainable oak was used for Dair Ghaelach, with trees felled in Grinsell’s Wood within Ballaghtobin Estate back in 2010 being transported to north west Spain to be expertly quarter-sawn. After this they head over to Antonio Paez Lobato cooperage in Jerez down in the south. Here the staves dry for fifteen months before being turned into hogsheads and receiving a medium char.
